I'll try to answer some of your questions!

Think you will need to support the ends of the CP antenna elements and put up with any loss in signal. Actually there shouldn't be much loss! Try using pvc (as in pvc pipework fittings) or just plastic for making support brackets. Modify just one antenna and give it a good testing! Keep the pvc to a minimum.(no conductive metal nearby)

2- should i swap them to normal stock antenna's rubber ? do they perform better against such wind force ?

Yes well you could use Dipoles on the Karts and keep the CP's on the vRx. If you make the diplole 52mm long (each element so that it's 104mm long in total) PVC coated 1mm dia wire.

You could also just try dipoles both ends! I think the motor racing guys only use dipoles.

C- Does resolution affect video link multipath or even video link at all ?

It shouldn't affect multipath, in theory the more data transmitted the shorter the range, but we are not talking hd and you have plenty of power and and the link is over short range.

Radio transmission is finicky stuff once it's UHF and above, think some testing will find the best results for you!
